Life update: I got engaged!

14 June 2023

In the midnight of our eighth anniversary as a couple, J and I decided to get married. ♡

About a year from now, on 6-12-24, I am going to be a wife.

I barely slept because I was too excited! I wanted to tell my closest friends but we decided to tell our respective families first.

We took his parents and sister Chelsea out the next day, and after a late lunch and a movie, we told them over coffee and waffles. The news was positively received. :) When we got home, we called my Mama, who was so happy but almost immediately demanded a grandchild, LOL.

We also called my friend and sunshine-in-a-box Ed and his husband Mark to relay the good news.

The call was filled with laughter and tears, especially when I asked Ed to be my Man of Honor. After everything we both went through in our friendship, truly, there could be nobody else.

J got me two rings:

One that is undoubtedly me (floral and multi-colored!) that I would choose to wear most of the time;

and a classic ring with a pretty prism moonstone that dances in the light.

We have one solid year to plan, but it's going to be just a small wedding so I am not yet feeling stressed about it. Our priorities are to make sure the venue is nice, the food is good, and the photos and videos are amazing. I am even seriously thinking about doing my own makeup.

Dusted off my secret Pinterest wedding board heehee.

We have yet to decide on all other details, but if there's one thing I am sure of it's going to be colorful and warm and full of joy.

I can't wait to be married to the love of my life. :)

Will work for dumplings

04 June 2023

Dumplings have long been a part of many cultures and cuisines around the world for hundreds of years - from China to America and Japan and Poland alike. Their popularity can be found anywhere from Chinese restaurants in North America and Japan to Polish ones across Poland. Here in the Philippines there are a lot of Chinese restaurants offering dumplings, and for my birthday in 2019 when we were in Singapore, I opted to celebrate with a dumpling buffet. A delicious sight - of hot steaming dumplings filled with vegetables or meats - often brings back fond memories of home and family; yet behind this iconic dish lies its rich history that contributes to its cultural significance worldwide. In this blog post we will delve into its multidimensional world while discussing its contribution over time in various cultures throughout time and how its influence on their cultures' cuisines throughout their existence.

History of Dumplings: From Ancient China to Today

Dumplings have their origins in ancient China and can be traced as far back as the 3rd century BCE, where they were made with various fillings such as meat (pork and chicken), vegetables and herbs. Dumplings served both practical and symbolic functions throughout Chinese history - from providing nourishment during times of hardship to symbolizing wealth during celebrations.

Dumpling Diversity Across Cultures

Over time, dumplings slowly expanded from their homeland in East Asia into other areas such as Europe and America. Each culture adopted them in unique and creative ways - for instance in Japan they're often made using thin wrappers filled with seafood or meat and vegetables; while in Poland pierogies are eaten as traditional comfort food.

Dumplings Today: A Global Phenomenon

Today, dumplings remain an indispensable staple in global cuisines - from Chinese potstickers to Russian pelmeni and beyond. Their popularity transcends practical uses; now being eaten during Chinese New Year celebrations for good luck or served at Polish Christmas dinners featuring pierogies made using family recipes passed down through generations, dumplings serve as reminders that we all share something in common regardless of our cultural backgrounds.

The Joy of Making Dumplings

Making dumplings can be more than a source of sustenance; it's an experience! Making these delicious morsels brings people together around a table to bond over laughter and delicious aromas while exploring creativity in the kitchen. Give this crockpot chicken and dumplings  recipe a try now and experience first-hand all that the joy of creating dumplings can offer you!

The Future of Dumplings

As cultures come together and blend, so will dumplings. There will no doubt be many delicious new versions emerging over time as we see more creative variations emerge. One thing is certain; dumplings will remain a beloved and delicious staple part of the global culinary scene for years to come.

Dumplings have long been part of many cultures worldwide and are celebrated with delicious delight as comfort foods and celebratory elements. Not only are they deliciously comforting treats, but also integral parts of many celebrations and gatherings - from their humble origins to modern creative variations, dumplings will continue to bring generations joy. No matter which variety of dumpling you enjoy making and eating - something magical is at work here that brings people together around food! Don't wait any longer: grab some wrappers, gather up your ingredients of choice and create something truly delightful to celebrate this timeless treat with friends and family for an unforgettable experience!

Our meet cute

25 April 2023

J and I met matched eight years ago today. I've been very open about the fact that we met via Tinder, as I am an advocate of the belief that you can meet friends (or even the love of your life) anywhere. There are some friends I met online or through my numerous hobbies whose relationships with me are tighter than those of friends I made in school or at work.

I am feeling nostalgic today so how about a little trip down memory lane?

April 25, 2015
This was me in the old Powerbooks (now an H&M) at Greenbelt 3. I went there to support Mina Esguerra's book launch before I went to my own e-book launch
J and I matched and talked for a bit on Tinder as I was getting ready to leave the house, and then continued our conversation via Facebook Messenger when I got home at around 10PM until we called it a night at 2AM.

June 2015
TOMS One Day Without Shoes
This was a work event that was open to the public so I was able to invite him. In here he got exposed to the work I do and the [PR] world I live in.

April 2016
We started celebrating our meet-anniversary

April 2017
Our first time to travel out of the country together

April 2018
In 2017 I was diagnosed to have myomas. As it might be a problem in case we decide to have kids in the future, the nuisances had to be removed so I had a myomectomy. It was a major operation and I was able to enjoy a two month-paid leave to ensure full recovery. My family, J, and his family supported me all the way.

April 2019
Our second time in Singapore together.
We went outside at night to take photos of him in his Spider-Man suit and we chanced on this yellow umbrella at the bus stop. We couldn't not recreate the iconic yellow umbrella scene from How I Met Your Mother

February 2020
One of our last couple of dates before the world shut down because of the pandemic. From renting an apartment near my old office in Makati, I had to move back to my family in Valenzuela. J and I didn't see each other for almost seven months.

July 2021
The year of several transformations. I turned 35 this year, and I felt something in me shifted. I moved out of my family's house again, quit my old job, learned how to cook, lost my Tatay, and got a new job.

May 2022
We voted and promptly got disillusioned. J got depressed for a couple of weeks after the national elections, which is very understandable. I wish there is an alternate universe where our presidential bet could have won, but this is our country's current reality, and it sucks.

March 2023
Celebrating eight years together this year. Can't imagine going through life without you by my side.

I recently blogged about getting our new puppy Lucy. It's only been six days but to be honest my memory about our life together before Lucy is slowly getting fuzzy. It's nice to be reminded of where we've been, and where we are going.

I love you, J. I am so thankful we matched, and that we chose each other over all the other people we matched with! We got it right. ♡

First time fur parent

24 April 2023

Major life update: we got a dog!

My dog. Our dog. Five days in and I still can't believe it.

Friends, meet Lucy. She's a shih tzu and she's the sweetest little puppy.

Here's the story of how she came to be a part of our little family.

A month ago, J's uncle offered us a doxiepoo (cross between a dachshund and a poodle, v cute). I didn't really think of myself as a dog person as the only pets I experienced taking care of are a martinez bird and fishes in a fish tank, and if anything I was looking to adopt a cat. But the doxiepoos captured our heart and we chose a black-colored puppy with a white mark on her forehead. Since they were only two weeks old at the time, we were told we could get her by May or June.

We looked forward to it, and I even started adding to my online shopping cart cute little dresses and collars I wanted to make her wear. We even named her Vienna. Vienna = sausage = because she was a sausage dog.

Unfortunately, she died. :( We were heartbroken but after a couple of days of thinking about it, chose another puppy from the litter. This time, it was a black-colored boy puppy with white markings on his belly and paw. I scrapped the dresses in my online shopping cart and chose stuff for a boy puppy instead. We named him Cole, and we were very excited because we were told we could already get him over the weekend. Cole = coal = because of his black fur.

Sadly, whatever afflicted Vienna must have affected the rest of the litter because they also didn't make it. They passed away on Tuesday morning. I was DEVASTATED. I was too sad when J's uncle messaged me about the bad news that I had to skip the rest of the work day. Thank God for considerate bosses and workmates that I was given the chance to grieve and let myself be sad.

However, I was dead-set on getting a puppy so I looked around Facebook Groups offering puppies for adoption for free. I was actually talking to another fur parent already about adopting one of her puppies, until Kookee (J's brother Jecco's girlfriend) messaged me about a surprise.

We picked her up on Wednesday after work. ♡

My first picture with Lucy
We were choosing between Luna and Lucy for the name, but when we saw her, she's definitely a Lucy.

First time to go to the mall!

Kookee even drove us to the mall so we could buy essentials and food for her. Thank you, Ninang Kookee! We are so grateful.

Cutie Lucy

We got her a really nice bed but she prefers sleeping on the floor because it's been so hot and humid lately.

No worries though because J boought her her personal electric fan and an air conditioner yesterday. Wow! Last night was the first night she slept on her bed. :")

Hehehehe she looks like she has another dog face on her back

Lady Lucy

Out and about to get a package downstairs
The harness and carrier came from Sarah, who sent a lot of stuff over! She even sent a bottle of Beachborn Beachdog Pawnitizer.
Thank you, Ninang Sarah!

We spent the long weekend just acquainting ourselves with her here at home, As per the vet's recommendation, her first vet visit will be on Wednesday. They said puppies need to adjust in their new home for at least a week as vet visits can be quite stressful for them. I'm looking forward to having her vaccinated so we can already take her out and meet other fur babies!

So there! I never imagined I'd be a first time fur parent at 37, but here we are, and it's been nothing but joyful. :) My favorite part is when I fix up her meals and she gets too excited that she wags her tail, and whenever J or I or both of us play with her and she wags her tail. Basically I love when she shows us she's happy by wagging her tail. :")

I also didn't think I'd be the kind of person that will open social media account for her dog, but here we are. She's on Instagram and TikTok, please follow her if you'd be so inclined. I am amazed at how much more reactions my Instagram Stories about her get as compared to my regular IG Stories HAHA.

Thank you for loving Lucy. ♡

06 April 2023

I do not know if it comes with age, but I have reached the point where I am perfectly content. I could use more money and more financial freedom, yes, but I am actually happy with the state of things. I live comfortably in the home I share with the love of my life, my siblings and I are having a house built for our family, I am doing okay at my job handling a team that is very efficient and self-sufficient. My heart is grateful.

I have yet to respond to all birthday greetings but I have read all of them. Thank you for taking the time out of your busy days to wish me a great celebration despite it falling into another Holy Week. Everything is awesome. :)

5 tips for getting healthier in the kitchen

22 March 2023

So you want to try and get a little healthier in the kitchen? We’ve all been there. When J and I get too busy with work, we end up ordering food and the expenses pile up. Aside from that, it's really not healthy in the long run. But at the same time, the idea of getting healthy can seem really daunting. Either you’ll be hungry, it’ll be hard work, and be tasteless — but that really doesn’t have to be the case. In fact, you’ll find that you can welcome healthy eating with ease when you take the right approach in the kitchen. Here are some tips you need to get healthier with your cooking.

Incorporate More Water

Staying properly hydrated is essential for good health, so where you can, try to add more water to your cooking. Things like cucumber (except I hate cucumber LOL), watermelon, and lettuce are great for this. It’s also important to make sure you’re drinking enough water throughout the day. I have a tumbler even though I work from home, to make sure I always have drinking water on hand. If you’re not a fan, you can also try adding fresh fruit to your water to give it an extra boost of flavor and nutrition.

Opt for Whole Grains

A simple way to get a little healthier is to swap out white bread and pasta for whole grains. Doing so will add more fiber and nutrients to whatever meal you’re making. Sometimes, you’ll worry that this will change the recipe, meal, or taste — but it won’t. Most of the time you’ll find that they taste just as delicious as regular bread and pasta.

Focus on Fresh Produce

Eating more fruits and vegetables is one of the best ways to improve your diet and get healthier in the kitchen. So why not bulk out your meals with more fruit and veg? You could even focus on veg-heavy dishes and try making this cabbage soup. Also, think about buying local produce from farmer's markets or grocery stores whenever possible to support small businesses in your area.

Use Healthy Oils

Olive oil, coconut oil, and avocado oil are all excellent choices when cooking meals that require oil. They all contain heart-healthy fats that can help reduce cholesterol levels and improve overall health. Where you can, try to avoid using vegetable oils like corn or soybean oil since they can be high in unhealthy trans fats.

Experiment With Herbs and Spices

And finally, herbs and spices are a great way to make your food taste better. Instead of extra calories or fat, you’ll get a much-welcomed burst of flavor. Don’t be afraid to explore some new spice combinations. You might even discover some new favorites along the way.

Mealtime Doesn’t Have to be Unhealthy!

So there you have it. Now you can see that making healthier meals doesn't have to be hard. All it takes is to focus on making small changes over time that will help improve your diet while still keeping things tasty. Choosing to hydrate more, opting for whole grain, bulking up dinners with fresh produce, switching to healthy oils, and using more herbs and spices can work wonders. It’s all about working to achieve a healthier lifestyle without sacrificing taste.
